食管癌是人类常见的消化道恶性肿瘤，在世界范围内其发病率位居所有肿瘤的第八位，死亡率位居所有肿瘤的第六位。大量流行病学调查表明，在一些食管癌高发区居民粮食中伏马菌素B1 (FB1)的污染水平明显高于低发区，而营养因素在食管癌的发生中也起到重要作用。本研究在江苏淮安食管癌高发区收集由县级以上人民医院提供的2007年至2009年经X线、内窥镜或病理确诊的未化疗食管鳞状细胞癌手术病例152例，开展伏马菌素
