Biofilms are a collection of microorganisms surrounded by extracellular polymeric substances they secret.These biofilms may contain spoilage and pathogenic microorganisms.This increases the risk of reduced shelf life and disease transmission.Biofilms present on the surfaces of milk processing equipment threaten the quality and safety of dairy products.Comers,cracks,Valves and joints are vulnerable points for biofilm accumulation.Biofilm formation can also cause the impairment of heat transfer and corrosion of metal surfaces.Biofilm formation and hs control on dairy processing line:Biofilm formation involves attachment,colonization,and growth of microorganisms.Different nutrients attached to the surfaces to form conditioning layer.
