  PHOSPHATIDYLCHOLINE (PC) acceleratd the oil oxidation containing photosensitizer under light.Phosphatidylethanolamine (PE) has similar structure to PC except having nitrogen,which enables to exert some role in the photosensitized oxidation of oil.This study investigated the effects of PE on the oxidation of canola oil in the presence of chlorophyll under light.CHLOROPHYLL b (0,4 ppm) and PE (0,1,10,or 50 ppm) were added to serum bottles having canola oil which was free from chlorophylls,phospholipids,and tocopherols.
