本研究采用SYSLG32-Ⅱ系列挤压膨化机对鱼糜、木薯淀粉、小麦粉、棕榈油、泡打粉、大豆分离蛋白、碳酸钙等混合原料进行挤压膨化，生产鱼糜挤压膨化产品。通过不同物料组分配比变化，研究了其对产品特性的影响。结果表明，各组分对产品特性有显著影响：随着鱼糜添加量的增大，产品膨化率下降，容积密度上升，膨化产品颜色褐变程度加深，硬度增大；较低的油脂含量能增加产品孔隙率，降低产品硬度及破碎总功；添加泡打粉、大豆
