冰箱贮藏对3种果蔬表面微生物群落结构的影响

  利用细菌16S rRNA基因V3区PCR-DGGE分析研究了三种果蔬(苹果、萝卜、番茄)在家用冰箱贮藏前后表面的非培养和可培养微生物群落变化。研究结果表明苹果表面非培养和可培养细菌多样性显著低于萝卜、和番茄,可能与其在市售前的打蜡处理有关。贮藏前苹果表面的非培养细菌主要为Epilithonimonas和Pseudomonas属的菌株,冰箱贮藏7天后以Pseudomonas和Acinetobacter属的菌株为主。苹果表面的可培养细菌多样性要高于非培养细菌,贮藏前以Pseudomonas和Yersinia属的菌株为主,贮藏7天后微生物群落结构发生较大的变化,主要以Aerococcus、Enterobacter、Acinetobacter和Comamonas的菌株为主。
