Aquatic species and their processing discards contain a myriad of bioactives that may be used in production of value-added functional ingredients.These include omega-3 oils, proteins and their hydrolyzates, as well as chitinous materials.The importance of omega-3 oils in heart and mental health as well as inflammatory disease risk reduction is well demonstrated.Furthermore, seafood proteins and their by-products, once hydrolyzed, afford hydrolyzates which help reducing blood pressure through ACE inhibitory activity and may also improve immune system in the body.
