Anisakis is an important hazard in marine products,and now there is growing demand for on-line non-constructive analytical techniques for effective monitoring of the parasite.Here UV fluorescent imaging was developed for detection of the third-stage larvae of Anisakis in marine fishes,and different processing methods based on ENVI and Matlab were investigated and preliminarily optimized.Using cod fillets as samples,the efficiency of the developed technique was evaluated,in which an overall detection ratio of 86.71% was demonstrated.Such results allowed us to suggest a promising application of the UV fluorescent imaging as an effective and non-destructive technique for Anisakis in fishery products.
