EFFECT OF DIMETHYL DICARBONATE AS DISINFECTANT ON THE QUALITY OF FRESH-CUT CARROT (DAUCUS CAROTA L.)

  Dimethyl dicarbonate(DMDC)is a safe and useful disinfectant widely used in beverage and wine industry.The effect of DMDC (200 mg/l) treatment on fresh-cut carrot was determined in this study.The results showed that DMDC treatment reduced significantly (p < 0.05) the total aerobic plate count (TAPC) by 3.01 log10 (cfu/g) and the count of total yeasts and moulds by 3.43 log10 (cfu/g) in fresh-cut carrot respectively compared with control (tap water washing).In addition, DMDC treatment could also inhibit the activity of polyphenol oxidase (PPO) and peroxidase (POD) and be beneficial to maintaining the level of vitamin C, the color quality and hardness of fresh-cut carrot during storage at 10℃.There was no significant influence on the β-carotene content of fresh-cut carrot treated by DMDC.Therefore, DMDC was a new effective disinfectant in fresh-cut carrot.
