Camelliasinensisis a shrub or evergreen tree up to 16m tall.Peroxidases can catalyze four reactions:The oxidative,peroxidative,catalytic and hydroxylation reactions.Plant materials were collected of Iranian fresh tea leaves (two leaves and a bud) applied three times (we named them samplel-3,first sample plucked in may,secondary in Jun,and third in August) from a farm located in north of Iran in harvesting time exactly,protein was determined by the method of Lowry et al.(1951),and Bradford (1976),in both cases bovine serum albumin was the standard.POD activity was determined by measuring the increase in absorbance at 530nm (or H2O2) with a spectrophotometer(Shimudzu UV-160).
