With the development of HPP (High Pressure Processing) within the food industry, this form of non-thermal pasteurization shows enhanced benefits in combination with Modified Atmosphere Packaging (MAP) as: (i) extending shelf-life of perishable foods; (ii) maintain and/or improve the quality of the product, such as better texture and more accurate protein refolding; (iii) marketing opportunities.
