After Meiji Reform, neoteric Japan has introduced into Western civilization actively, each field, such as life, politics and economy, has been in full bloom of civilization. This effect certainly spreads to the dietetic life. This paper discusses the dietetic culture from the Meiji Reform to the World War II primarily to probed into the subject "how did Japan absorb the western culture". Firstly, as the background of this paper, it takes Japan and Western Europe’s dietetic life and their respective culture characteristics from mediaeval times to latter-day. The chapterⅡtakes the developing progress of occident food as basis to explore the transformation of neoteric Japan’s dietetic life. From the meat food lifting a ban, occident food has got a big development, even entered the common family. From the introduction of the occident food materials, dishes and kitchen revolution aspects, the third chapter expounds the content of occident food acceptance. The chapterⅣsums up the character of dietetic culture in absorbing western culture and the effect to Japanese modernization. Western European style of the dietetic life is developed from carriage trade to underclass with consciousness. Japanese doesn’t accept the external dietetic culture without change, but make "own" and "external" combination. In addition, the acceptance for Occident dietetic culture promotes the progress of Japanese modernization.
