目的:对福建省食品中O157∶H7大肠杆菌进行分离调查,并对分离菌株的O157抗原编码基因(rfbO157)和H7抗原编码基因(flicH7)以及毒力基因(志贺毒素基因stx、粘附抹平因子基因eaeA、溶血素基因hlyA)进行检测。方法:按照《全国食品污染物检测相关实验室操作手册(食源性致病菌部分)》的要求,用EC肉汤增菌,快诊金卡筛选,接种CHROM agar O157显色平板,血清和生化系列证实。结果:1 380件食品中分离到O157∶H7大肠杆菌4株,分别为福州的生猪肉和水产品蚶中各1株、尤溪的冻鸡肉2株,检出率0.29%。结论:福建省食品中存在O157∶H7大肠杆菌的污染,虽检出率较低,这可能与福建不是O157∶H7大肠杆菌的流行地区有关,但监测是一项长期的工作,防患于未然,同时福建省也将O157∶H7大肠杆菌列入了食品安全预警系统的一部分。
OBJECTIVE: To investigate the isolation of O157: H7 Escherichia coli in food in Fujian Province. The genes encoding the O157 antigen encoding gene (rfbO157) and H7 antigen (flicH7) and virulence genes (stx, Ping factor gene eaeA, hemolysin gene hlyA) were detected. Methods: According to the requirements of the National Laboratory for Food Contamination Control (Food-borne Pathogenic Bacteria), the bacteria were stained with EC broth and screened by fast-acting golden card and inoculated with CHROM agar O157 color plate, serum and Biochemical series confirmed. Results: Four strains of O157: H7 Escherichia coli were isolated from 1 380 foodstuffs, one for each of the raw pork and aquatic products in Fuzhou and two for frozen chicken in Youxi, with a detection rate of 0.29%. Conclusion: There is contamination of O157: H7 Escherichia coli in food in Fujian Province. Although the detection rate is low, this may be related to the endemic areas in Fujian that are not O157: H7 Escherichia coli. However, monitoring is a long-term project and take preventive measures , While Fujian Province also included O157: H7 Escherichia coli as part of the food safety early warning system.
