目的通过对乌鲁木齐市餐饮业,尤其是中小型餐饮业的卫生状况进行调查分析,发现影响餐饮业卫生状况的关键因素,为餐饮业卫生监督管理工作提供科学依据。方法随机抽取乌鲁木齐市天山区、沙依巴克区、新市区、水磨沟区的部分中、小型餐饮单位的卫生状况进行调查。结果乌鲁木亮齐市中小型餐饮业普遍重视卫生许可证、健康证和前厅卫生状况,不重视餐饮具消毒,垃圾处理和食品原料索证情况。结论卫生监督部门严格卫生许可证发放制度,加大预防性卫生监督,对中小型餐饮业进行分季度、分阶段的监督检查,专项整治工作要突出重点,进一步加强负责人和从业人员的培训。
Objective To investigate and analyze the health status of the catering industry in Urumqi, especially the small and medium-sized catering industry, and find out the key factors that affect the health condition of the catering industry and provide a scientific basis for health supervision and management of the catering industry. Methods The health status of some medium and small catering units in Tianshan District, Shayi Bak District, Xin Shi District and Shuimogou District of Urumqi were randomly selected. Results Urumqi, Liangqi small and medium-sized catering industry generally attach importance to health permits, health card and front hall health status, do not attach importance to food and beverage disinfection, garbage disposal and food raw material claims. Conclusion The health supervision departments strictly enforce the system of health permit issuance, increase preventive health supervision, and supervise and inspect the small and medium-sized catering industry in quarterly and phased manner. The special rectification work should lay stress on the key points and further strengthen the training of responsible persons and practitioners.
