以“豇豆”为试材,探究不同保鲜膜包装处理对豇豆的保鲜效果。结果表明:室温下贮藏,CO_2高渗透性保鲜膜和纳米膜处理均能有效延缓失重率的升高,抑制可溶性固形物(TSS)、维生素C和可溶性蛋白质含量的降低,抑制丙二醛(MDA)含量的增加,维持细胞膜的完整性,同时延缓了过氧化物酶(POD)活性的升高,增强了过氧化氢酶(CAT)活性,从而延缓了豇豆的衰老和活性氧的损伤。其中,CO_2高渗透性保鲜膜的保鲜效果较佳。
