Phytate (phytate) in the diet of developing countries is high, while developing countries try to increase the intake of cellulose in order to raise dietary phytate levels. Little is known about the relationship between the total amount of phytate in a meal and its extent of inhibition of iron absorption. This study reports the correlation between the two and attempts to counteract the inhibitory effect of phytate on iron absorption by ascorbate and meat.
