小麦品质是由多因素构成的综合而相当复杂的概念。由于人们对小麦面粉使用的目的不同,对品质的要求也就各异。因此,小麦品质概念从不同角度有不同的标准,采用多种指标体系才能全面反映品质概念的内涵。通常所指的小麦品质,主要包括营养品质和加工品质两方面内容,而在流通领域也较多采用形态品质指标。
