在粤东揭西县的宾馆酒家就餐,都可以尝到一种苦中带甘,美味可口的竹笋;在城镇的大街小巷,也随处可见小贩们浸泡在水桶里,精如手指,洁白似玉的这种竹笋。这种竹笋叫大洋苦笋,它味苦带甘,营养丰富,性凉而不寒,具有消食开胃,清热去腻的作用。高血压者常吃更有降压之功,其妙无穷。当地群众常把竹笋采下来,剥掉竹壳,放在锅里煮沸后,再放在冷水中浸泡几天(每天换水)即可用肉炆炒,也可熬汤。如果配上半肥肉(或猪脚)、咸菜熬煮,可使咸菜转青,肥而不腻,格外鲜美。难怪一些老华侨一回到乡梓就要找苦笋
