目的通过对一起食物中毒进行病原学诊断和中毒原因分析,探讨食物中毒病原菌的快速诊断和溯源的方法。方法对食物中毒病人和环境样品采样,依据改良分子信标方法和中华人民共和国国家标准《食品卫生微生物学检验》(GB/T4789-2003)进行病原诊断,然后用脉冲场凝胶电泳(PFGE)技术对病原菌进行溯源。结果5份患者的肛拭子均检出肠炎沙门菌,8份糕点师傅的肛拭子中1份检出肠炎沙门菌,21份可疑食品中2份检出肠炎沙门菌,21份生产加工环境样品中1份检出肠炎沙门菌;PFGE分型得出2种型别,这2种型别仅有一条带的差异。结论改良分子信标方法能够快速准确的诊断引起食物中毒的病原菌,为传统方法提供检测方向。脉冲场凝胶电泳(PFGE)技术对病原菌的溯源以及分析菌株之间的相关性具有重要意义。
Objective To analyze the etiological diagnosis and the causes of poisoning caused by food poisoning, and to explore the rapid diagnosis and traceability of food poisoning pathogens. Methods Food poisoning patients and environmental samples were sampled and pathogen was diagnosed by improved molecular beacon method and National Food Microbiological Examination (GB / T4789-2003) of the People’s Republic of China, and then pulsed-field gel electrophoresis (PFGE) Technology for traceability of pathogens. Results All 5 patients were diagnosed as Salmonella enteritidis, 1 in the swab of 8 pastry chefs, 1 in the swab, 2 in 21 suspicious foods, 21 in the production and processing environment One of the samples detected Salmonella enteritidis; two genotypes were obtained by PFGE typing, and the two genotypes showed only one band difference. Conclusion The improved molecular beacon method can rapidly and accurately diagnose the pathogens causing food poisoning and provide the detection direction for the traditional methods. Pulsed-field gel electrophoresis (PFGE) has important significance for traceability of pathogens and analysis of the correlation between strains.
