清炒系指一般种子和药材切片不加任何辅料,直接在锅内炒制的一种方法。据统计清炒在常用药材切片中占20%左右,种子达97%以上,故有“逢子必炒”之称。根据治疗上的需要,炒制的程度不同,可分为炒黄、炒焦、炒炭三类。明代陈嘉谟在《本草蒙筌》指出;“凡药制造,贵在适中,不及则功效难求,太过则气味反失……”长期以来,在一些医疗单位和药材部门,由于各方面原因,炮制质量下降,严重存在着“太过与不及”或以生用为主,从而影响了治疗效果。现对清炒体会简述于后。
