蛋白质对人体的重要性不容置疑,然而,如何确认某种蛋白质是优质蛋白的方法目前还没有定论。对此,美国化学学会期刊《农业和食品化学杂志》发表的一篇文章中,介绍了新的研究结果,这项科学试验仔细评估了一些决定蛋白质质量的标准。传统确定蛋白质质量的方法显示高质量蛋白基本为动物蛋白,比如牛奶和鸡蛋蛋白。
The importance of protein to the human body can not be questioned, however, how to confirm that a protein is a high-quality protein is still inconclusive. In this regard, an article published in the Journal of Agricultural and Food Chemistry published in the Journal of the American Chemical Society introduces new findings that scrutinize some of the criteria for determining protein quality. Traditional methods of determining protein quality have shown that high quality protein is essentially animal protein, such as milk and egg protein.
