几乎所有癌症的发生和增殖均受环境因素的影响。不言而喻,在这些环境因素中人们每天吃的食物——营养品,对癌的发生和增殖中起着重要的作用。有关癌与食物之间的关系,至今有不少报道,然而这些报道都是以家鼠,白鼠,兔等实验动物为材料的;都是按人们所规定的质和量来进行喂养试验,也就是以脂肪、蛋白质,碳水化合物,特别是维生素及矿物质等配制成的人工饲料投服于试验动物。若用这些试验结果来解释人类的食物与发癌的关系时,势必在许多情况下和实际情况不相符。原因是人类
