紫角叶为一年生藤尖缠绕草本植物,我国已有三千多年的栽培历史。过去在江苏农村种植紫角叶多是为了挡阳遮荫,只是偶尔作为熬汤佐料。近年,有人采其嫩叶到大城市试销,想不到,这从未登过“大雅之堂”的紫角叶在市场上刚一露脸,就深得广大城市居民的青睐。紫角叶色味俱佳,营养丰富。它绿如碧玉,鲜嫩软滑,富含维生素和蛋白质。炒食、作汤或凉拌均可。其外形和口感都极似木耳。目前,它已成为风靡江苏各大中城市的一种特色菜
