以两系杂交红米稻品种皖稻129为材料,提取糙米中的黑米色素,研究了光照、金属离子、温度和pH值等环境因素对黑米色素稳定性的影响。结果表明,黑米色素在10~80℃的温度环境、pH值4~12的酸碱性环境下以及在溶液中添加0.1~2.0mg/mL的Ca2+、K+后均表现较为稳定,但添加0.5 mg/mL以上的Fe2+、Sn2+能使其逐渐沉淀,在100℃高温条件和光照条件下表现不稳定。
The two-line hybrid rice variety “Wandao 129” was used to extract black rice pigment from brown rice. The effects of environmental factors such as light, metal ions, temperature and pH on the stability of black rice pigment were studied. The results showed that the black rice pigment in the temperature of 10 ~ 80 ℃ environment, the pH value of 4 ~ 12 acid-base environment and in the solution to add 0.1 ~ 2.0mg / mL of Ca2 +, K + after all showed more stable, but adding 0.5 Fe2 + and Sn2 + above mg / mL can make them precipitate gradually, and they are unstable under the condition of high temperature of 100 ℃ and light.
