以“红地球”葡萄为试材,以清水为对照(CK),研究了不同浓度膨大剂(低浓度40、80mg·L~(-1),高浓度100、200mg·L~(-1))处理对“红地球”葡萄贮存品质的影响。结果表明:使用膨大剂处理后“红地球”葡萄可溶性固形物、可滴定酸和总酚含量下降快,且膨大剂的浓度越高,下降的越快;腐烂率、漂白指数和呼吸强度提高,膨大剂的浓度越高,提高的越多;低浓度(40、80mg·L~(-1))膨大剂处理葡萄的金属螯合力和对DPPH自由基清除力最高,高浓度(100、200mg·L~(-1))处理次之,CK最低;贮存30d前,低浓度(40、80mg·L~(-1))膨大剂处理葡萄维生素C含量、铁氰化钾还原力和羟自由基清除力最强,高浓度(100、200mg·L~(-1))处理次之,CK最低,贮存60d后,CK变为最高,高浓度(100、200mg·L~(-1))处理变为最低。在实际生产中要考虑膨大剂对“红地球”葡萄口感、外观及保健功能的影响,根据需要合理使用膨大剂。
