目的通过对蜂蜜中5-羟甲基糠醛含量的测定,为蜂蜜质量管理提供依据;方法 GB/T18932.18-2003高效液相色谱法-紫外检测器检测蜂蜜中5-羟甲基糠醛含量;结果 115批样品中5-羟甲基糠醛超出标准值共42批次;结论蜂蜜的储存时间和储存环境或在蜂蜜添加其他物质对蜂蜜中的5-羟甲基糠醛的含量有很大影响,蜂蜜中5-羟甲基糠醛的含量是验证评价蜂蜜质量的重要指标。
Objective To determine the content of 5-hydroxymethylfurfural in honey and provide a basis for the quality control of honey.METHODS The content of 5-hydroxymethylfurfural in honey was determined by high performance liquid chromatography-ultraviolet detector (GB / T18932.18-2003) Results A total of 42 batches of 5-hydroxymethylfurfural were out of the 115 batches of samples. Conclusion The storage time and storage environment of honey or the addition of other substances to honey greatly influenced the content of 5-hydroxymethylfurfural in honey, The content of 5-hydroxymethylfurfural in honey is an important indicator to verify the quality evaluation of honey.
