中唐以后,茶作为饮料,已从王公贵族的专享品,逐渐成为人民日常生活的必需品,成为如同柴米油盐一样,须臾不可或缺的东西。“茶兴于唐而盛于宋”,随着饮茶的蔚然成风,茶文化也日趋成熟。至宋代,迎来了里程碑式的鼎盛期。其显著标志之一,便是各种茶礼、茶俗应运而生,以其独特的丰富内涵,成为我国传统文化苑囿中的奇葩。今试据有关史料,拟对唐宋时代的茶礼仪、茶俗进行概略的考述。显而易见,这些茶礼俗多产生在宋代,当然也有滥觞于唐代或更早一些的,有些礼俗还为元明清所沿袭,甚至影响到近现代。因限于篇幅,凡上溯下涉,仅据实际情况而略加旁述,本文考述的重点显然是在宋代。另外,笔者拙文《唐宋茶艺述论》中也谈到一些茶俗,如分茶、斗茶等,这里就不再赘述了。

Obviously, these tea ceremony mostly occurred in the Song Dynasty, of course, there are some in the Tang Dynasty or earlier, and some etiquette also follow the Yuan, Ming and Qing dynasties, and even affect the modern. Due to space limitations, who go back down, only slightly narrative based on the actual situation, the focus of this article apparently in the Song Dynasty. In addition, the author Zhuo Wen “Tang and Song Dynasties tea theory” also talked about some tea custom, such as sub-tea, tea, etc., will not repeat them here.
