对云南大桃县供销合作社收购的核桃花的营养成分进行测定分析,并与干蕨菜和脱水白菜进行比较。结果表明,核桃花中蛋白质含量21％;总氨基酸含量18.22％,其中必需氨基酸占41.2％,谷氨酸占23％,色氨酸占8.7％。支链氨基酸含量也较高,但含硫氨基酸含量偏低,为第一限制氨基酸,化学生物价为41.48％,粗纤维不到干蕨菜的一半,灰份比干蕨菜高1倍多,K、Fe、Mn、Zn含量比蕨菜和脱水白菜 The nutritional components of walnut flower purchased from supply and marketing cooperatives in Data County of Yunnan Province were determined and compared with that of dried bracken and dehydrated cabbage.
