亚硝酸盐主要是指亚硝酸钠,俗称工业用盐,为一种白色或微黄色结晶,有的为颗粒状粉末,无臭,味微咸涩,易潮解,易溶于水。外观及滋味都与食盐相似,但是对人体却有极大的伤害。由于自然及人为因素的影响,一直以来,动物性食品中亚硝酸盐的含量逐渐增高,人们如果长期食用这种被亚硝酸盐污染的食品,毒性蓄积,对身体健康产生危害。因此,严格监测食品中亚硝酸盐的含量,对于保证食品安全、确保老百姓的身体健康非常重要。
