2009—2013年浙江省谷物及制品中铅污染状况分析

目的了解浙江省谷物及制品中铅污染状况。方法采取多级随机抽样方法,2009—2013年在全省农贸(批发)市场、超市、商店等地采集谷物及制品1475份,结果按照食品安全国家标准GB2762—2012《食品中污染物限量》进行评价。结果铅检出率为74.51%(1099/1475),合格率为97.42%(1437/1475)。大米、小麦粉、玉米及玉米面中铅含量不同(χ~2=18.96,P<0.05)、铅检出率依次降低,合格率依次升高且差异具有统计学意义(χ~2=10.48,P<0.05)。不同采样场所的合格率差异有统计学意义(χ~2=13.35,P<0.05),不同产地的合格率差异没有统计学意义。结论浙江省谷物及制品中铅污染水平总体上较低,但部分样品中铅含量高且超过限量标准。 Objective To understand the status of lead pollution in cereals and products in Zhejiang Province. Methods A total of 1475 cereals and products were collected from farmer’s trade (wholesale) markets, supermarkets and shops across the province during 2009-2013 according to the multistage random sampling method. The results were obtained according to the national food safety standard GB2762-2012 “Limit of Contaminants in Food” Evaluation. Results The detection rate of lead was 74.51% (1099/1475) with a pass rate of 97.42% (1437/1475). The lead content in rice, wheat flour, corn and cornmeal were different (χ ~ 2 = 18.96, P <0.05), the detection rates of lead decreased in turn and the pass rates increased successively and the differences were statistically significant (χ ~ 2 = 10.48, P < 0.05). There were significant differences in pass rates between different sampling sites (χ ~ 2 = 13.35, P <0.05). There was no significant difference in pass rates between different sampling sites. Conclusion The level of lead pollution in cereals and products in Zhejiang Province is generally low, but some samples contain high levels of lead and exceed the limit.
