《餐饮服务与管理》是餐饮服务与管理专业学生的核心职业技能课,其教学模式对学生餐饮服务与管理的职业能力培养和职业素养形成起着重要支撑与促进作用。借鉴国内外研究成果,从分析高职院校该课程教学存在的问题入手,结合新常态下社会对高职餐饮专业学生的职业能力需求,提出嵌入式CBE教学法《餐饮服务与管理》课程教学新模式,并指出该模式实施的必要条件,有一定参考价值。
Catering service and management is the core vocational skill class for catering service and management students. Its teaching mode plays an important supporting and facilitating role in cultivating students’ occupational competence and professionalism in catering service and management. Based on the research results at home and abroad, this paper starts with the analysis of the existing problems in the teaching of higher vocational colleges, and puts forward the teaching of “Catering Services and Management” in embedded CBE teaching method according to the society’s demand for the vocational ability of the catering major students in the new normal. New model, and pointed out that the mode of implementation of the necessary conditions, there is a certain reference value.
