江西婺源县的劳动人民历来有养鱼的习惯,红荷包鲤是这里的养殖良种,肉味鲜美,容易养殖.因体色鲜红或桔红、体形似“荷包”而得名.但是在漫长的岁月里,红荷包鲤在山间小溪、乡村池塘自繁自育,或与其他鲤鱼随机交配,造成了品种的严重不纯.一九五八年,江西省水产部门建立了婺源红荷包鲤鱼研究所,开展了提纯选育工作,到一九七八年,已选育到子五代,使此种鱼的优良性状不断巩固和完善,纯度不断提高,现已形成一个性状独特的经济鱼种.它头小尾短,脊高体宽,腹部肥大,体表呈金红或桔橙色,产肉率高,肉质细嫩、鲜美,营养丰富.据测定:蛋白质含量为19.5%,
