肉毒中毒是由于摄食含有肉毒梭菌外毒素的食品所引起。根据我区流行病学调查材料说明肉毒中毒多系食用家庭自制发酵食品引起,而食用集体制作者较少见。为探索产毒规律,主要模仿上述两种制作方法进行对比试验。现将初步探讨情况报告如下:
