目的:了解浙江省桐庐县市售食品中食源性致病菌污染状况。方法:对桐庐县5个主要开放性农贸市场和2个非开放性超市市场,采集8大类9个品种509份食品,进行6类食源性致病菌检测。结果:509份食品中检出致病菌115株(检出率22.59%),其中溶血性弧菌71株、沙门菌31株、金黄色葡萄球菌13株,检出率分别是13.95%、6.09%、2.56%。水产品、猪肉和海产品中致病菌检出率分别为54.28%、28.70%和26.67%。夏秋季开放性市场食源性致病菌检出率是非开放性市场的3.5倍。结论:水产品、猪肉和海产品是桐庐县主要污染食品;副溶血性弧菌、沙门菌和金黄色葡萄球菌是该县食品中常见的食源性致病菌,而且以副溶血性弧菌污染为主,其次依次为沙门菌、金黄色葡萄球菌。开放性市场改为非开放性的市场,夏秋季食品食源性致病菌检出率可以下降72%.
Objective: To understand the status of food-borne pathogenic bacteria in the commercial food in Tonglu County, Zhejiang Province. Methods: Five major open markets for farmers and two non-open supermarkets in Tonglu County were collected from 509 foodstuffs in 8 major categories and 9 varieties for 6 foodborne pathogenic bacteria tests. Results: A total of 115 pathogenic bacteria were detected in 509 samples (detection rate was 22.59%), of which 71 were Vibrio parahaemolyticus, 31 were Salmonella and 13 were Staphylococcus aureus. The detection rates were 13.95%, 6.09 %, 2.56%. The detection rates of pathogens in aquatic products, pork and seafood were 54.28%, 28.70% and 26.67% respectively. The detection rate of food-borne pathogens in the open market in summer and autumn is 3.5 times of the non-open market. Conclusion: Aquatic products, pork and seafood are the main pollutants in Tonglu County. Vibrio parahaemolyticus, Salmonella and Staphylococcus aureus are common food-borne pathogenic bacteria in this county. Pollution, followed by Salmonella, Staphylococcus aureus. Open market to non-open market, summer and autumn food-borne pathogenic bacteria detection rate can drop 72%.
