Among the five basic taste receptors of sweet,bitter,sour,salty,and umami,bitter receptors (TAS2Rs) are particularly important for animal survival because they have evolved as a central waing system to help avoid ingesting potentially toxic substances [1].TAS2R,belonging to G protein-coupled receptors (GPCRs) superfamily,can recognize varieties of bitter substances as ligands.TAS2Rs are different from many other GPCRs in that they are promiscuous and capable of binding with a wide range of compounds with relatively low specificity and affinity [2].TAS2Rs are expressed in many tissues,including respiratory tract,bladder,pancreas,testes,central nervous system,and the gastrointestinal tract in addition to the tongue [3,4].Functions of TAS2Rs are under study but,at this point,are poorly understood.
