随着蔬菜产销改革的深入发展,自1988年以来,上海郊区的生菜栽培面积逐年增加,栽培的品种也不断增多.栽培技术亦日趋成熟.生菜不仅是西餐蔬菜色拉的当家菜,也已被市民们接受.生菜是叶用莴苣的俗称.系一年生或二年生草本植物.原产欧洲地中海沿岸.每100g食用部分含水分94%~96%.因此,可生食,质脆爽口鲜嫩,营养丰富.每100g食用部分含蛋白质1g~1.4g,碳水化合物1.8g~3.2g,维生素C10mg~15mg,还有一些矿物质.生菜内含有莴苣素,故而有消炎、催眠作用.
