目的:了解萧山区餐饮业许可证发放后食品安全状况,进而采取相应对策。方法:先后于许可证发放1个月内,6个月后,对103家餐饮业开展食品安全专项调查,对2次调查结果进行比较。结果:食品采购进货验收台账建有率、索证率、采购蔬菜农药残留检测率、食品安全小组运行率、卫生制度建有率、从业人员健康证持证率许可证发放前期达到100.00%,许可证发放6个月后,上述指标分别为80.58%(83/103)、78.64%(81/103)、57.28%(59/103)、73.79%(76/103)、83.50%(86/103)和78.20%(366/468),许可证发放前后两率比较均有显著性差异(χ2>2.58,P<0.001)。结论:萧山区餐饮业食品安全状况存在着许可证发放时良好,而发放后一段时期呈下降的趁势,尤其是小型餐饮业和建筑工地食堂这一状况更为明显。
OBJECTIVE: To understand the food safety situation after the issuance of the catering industry license in Xiaoshan District, and then to take appropriate countermeasures. Methods: One month after the permit was issued and six months later, a special food safety investigation was conducted on 103 restaurants and the results of the two surveys were compared. Results: The rate of purchase and acceptance of food purchase ledger, yield rate, the detection rate of pesticide residues in purchased vegetables, the operation rate of food safety teams, the rate of establishment of health system and the permit issuance rate of health certificate of practitioners reached 100.00% Six months after the permit was issued, the above indicators were 80.58% (83/103), 78.64% (81/103), 57.28% (59/103), 73.79% (76/103), 83.50% (86/103 ) And 78.20% (366/468). There was a significant difference between the two rates before and after the permit issuance (χ2> 2.58, P <0.001). Conclusion: The food safety situation in the catering industry in Xiaoshan District is good when the permits are issued. However, the decline in the period after the issuance is taking place. This is especially true for the canteens in the small-scale catering industry and the construction site canteens.
