目的:了解萧山区餐饮业许可证发放后食品安全状况,进而采取相应对策。方法:先后于许可证发放1个月内,6个月后,对103家餐饮业开展食品安全专项调查,对2次调查结果进行比较。结果:食品采购进货验收台账建有率、索证率、采购蔬菜农药残留检测率、食品安全小组运行率、卫生制度建有率、从业人员健康证持证率许可证发放前期达到100.00%,许可证发放6个月后,上述指标分别为80.58%(83/103)、78.64%(81/103)、57.28%(59/103)、73.79%(76/103)、83.50%(86/103)和78.20%(366/468),许可证发放前后两率比较均有显著性差异(χ2>2.58,P<0.001)。结论:萧山区餐饮业食品安全状况存在着许可证发放时良好,而发放后一段时期呈下降的趁势,尤其是小型餐饮业和建筑工地食堂这一状况更为明显。 OBJECTIVE: To understand the food safety situation after the issuance of the catering industry license in Xiaoshan District, and then to take appropriate countermeasures.
