目的了解濮阳市饮食行业餐(饮)具消毒效果的卫生状况,为卫生监督执法提供科学依据。方法用大肠菌群快速检验纸片,按国家《食(饮)具消毒卫生标准》(GB14934-94)规定的纸片法进行采样和检测。于2009年对本市不同规模饮食行业消毒后餐(饮)具进行了抽样检测和结果评价。结果共抽检餐(饮)具3 552件,总合格率为66.75%,其中不同类型餐饮单位餐(饮)具监测合格率为:大型83.98%,中型64.61%,小型餐馆及早餐、夜市个体饮食流动摊贩39.08%;不同季度检测合格率为:第一、第二季度69.82%、77.52%高于第二、第三季度66.28%、62.28%;不同种类餐(饮)具合格率为:大件餐具菜碟、汤盆、盘子60.23%,小件餐(饮)具碗、筷、碟、杯子71.53%,小件餐具消毒合格率高于大件餐具。结论濮阳市餐饮具消毒合格率较低,其中以小吃店(摊)等其他餐饮业和小规模餐饮店餐(饮)具卫生状况较差,应切实加强卫生监督和监测力度,全面落实消毒和卫生管理制度,提高餐(饮)具消毒卫生质量。
Objective To understand the sanitary status of food (drink) disinfection in the food industry of Puyang and provide a scientific basis for health supervision and law enforcement. Methods Using coliform bacteria to test the paper quickly, the paper was sampled and tested according to the paper method stipulated by the national “food (drink) disinfection health standard” (GB14934-94). Conclusions Puyang has a relatively low rate of disinfection of tableware, among which snacking (stalls) and other small-scale catering establishments have poor sanitary conditions. Health supervision and monitoring should be strengthened and disinfection and Health management system to improve food (drink) with a disinfection of health quality.
