采用田间试验的方法,探讨了不同氮水平影响下马铃薯块茎中蛋白质和淀粉含量的动态变化规律。试验结果表明:播种后63~91 d,不同处理的块茎粗蛋白质含量随施氮水平的增加而增加,之后施氮120kg.hm-2处理下降较快;过量的氮肥不利于可溶性糖向淀粉的转化;马铃薯收获时,各处理马铃薯块茎总淀粉含量分别为61.92~66.91g.100g-1.DW,过高的氮肥水平并不利于马铃薯生长后期块茎中淀粉的积累以及直链淀粉的相对含量的提高。
Field experiments were conducted to investigate the dynamic changes of protein and starch content in potato tubers under the influence of different nitrogen levels. The results showed that the crude protein content of tubers increased with the increase of nitrogen application rate from 63 to 91 days after sowing, and decreased rapidly after 120 kg.hm-2 of nitrogen application. Excessive nitrogen fertilizer was not conducive to soluble sugar to starch Transformation; potato harvest, the processing of potato tubers total starch content of 61.92 ~ 66.91g.100g-1.DW, high nitrogen levels are not conducive to the accumulation of potato in the late tubers of starch and the relative content of amylose improve.
