异Vc即异抗坏血酸,为Vc的异构体,工业上由葡萄糖经莹光极毛杆菌类发酵制取,目前全世界需求量达1万吨,主要生产公司为美国菲泽公司。日本只有藤泽药品公司一家生产,拥用能力约300吨/年,日本国内需求700-800吨,其中进口约300吨。异Vc为公认的食品添加剂,人日容许摄取量无限制。它比Vc酸化速度快,添加于食品中能保护其中的Vc,防止贮存中的Vc损失,与Ve配合使用有协同效果,尤其是比Cc价廉,因此广泛用于畜肉、鱼加工制品、果类、蔬菜、酱油、果汁、饮料、葡萄酒、啤酒、果酱、番茄酱、奶酪、蛋黄酱、黄油、面包等保鲜、防止变色、变质。另外也用作化妆品
