目的了解重庆地区铁路食品安全基本现状,分析重庆地区铁路食品安全的主要影响因素,为制定科学的监督管理措施提供依据。方法采用随机抽样方法,随机抽取重庆铁路卫生监督所管辖重庆地区铁路沿线的餐饮单位作为调查对象,应用铁道部印发餐饮单位日常监督表及各餐饮单位基本信息调查表进行调查,描述各餐饮单位的卫生现状,并对影响因素进行分析。结果重庆地区铁路食品安全检查合格率为79.05%,优秀率仅为9.50%,各餐饮单位存在的问题主要集中在进货台账记录不完整、从业人员无有效健康证明、索证索票未落实、冰箱冰柜内食品混放等。通过对食品安全影响因素的分析得出餐饮单位的管理方法、餐饮管理、从业人员基本工作素质、监察机构监督监察频率高低对铁路食品安全的联系十分密切。结论重庆地区铁路食品安全合格率处于较低水平,存在的安全隐患较多,应结合铁路食品安全现状及影响因素积极改善铁路食品卫生,预防食品安全事故的发生。
Objective To understand the basic status quo of railway food safety in Chongqing, analyze the main influencing factors of railway food safety in Chongqing and provide the basis for making scientific supervision and management measures. Methods A random sampling method was adopted to randomly select the catering units along Chongqing’s railway line under the jurisdiction of Chongqing Railway Health Surveillance Agency as the survey subjects. The Ministry of Railways issued the daily supervision table of the catering units and the basic information survey table of the catering units to survey the catering units Health status quo, and analyze the influencing factors. Results The passing rate of railway food safety inspection in Chongqing was 79.05%, the excellent rate was only 9.50%. The problems of catering units mainly concentrated in the incomplete records of purchase accounting, no effective health certificate, Freezer food mixing and so on. Through the analysis of the influencing factors of food safety, the management methods, catering management and basic working quality of catering staff come to the conclusion that the frequency of supervision and inspection by supervisory agencies is very close to the railway food safety. Conclusion The passing rate of railway food safety in Chongqing is at a low level, and there are many potential safety problems. Railway food hygiene should be actively improved to prevent the occurrence of food safety accidents in light of the current status and influencing factors of railway food safety.
