目的全面了解河池市金城江区食品卫生质量状况。方法随机抽取开放性农贸市场和零售摊点、超市、专卖店五大类100份食品,按照国家标准《食品微生物学检验》提供的方法进行检测,并按照国家标准进行结果判定,对检测结果进行统计学分析。结果 100件检测样品中,细菌总数合格61件,合格率61.0%;大肠菌群合格89件,合格率为89.0%,食品受微生物污染的程度依次是:肉及肉制品>冷饮>调料>糕点>酱腌类。其中酱料类合格率最高,为90.0%;肉及肉制品合格率最低,为44.9%。超标样品中以细菌总数超标最多,占不合格数的39.0%。结论该区肉及肉制品细菌总数和大肠菌群检出率较高,仍是食品中常见的污染菌。目前该区食品卫生情况不容忽视,受微生物影响较为严重,应加强监督与指导。
Objective To understand the status of food hygiene in Jinchengjiang District, Hechi City. Methods A total of 100 foodstuffs were randomly selected from the five categories of open markets for farmers, retail stalls, supermarkets and specialty stores. The foods were tested according to the methods provided by the National Food Microbiological Examination. The results were determined according to the national standards and the results were statistically analyzed analysis. Results Among the 100 test samples, the total number of bacteria was 61 and the pass rate was 61.0%. The number of coliform bacteria was 89 and the pass rate was 89.0%. The order of microbial contamination was: meat and meat products> cold drink> seasoning> cakes > Pickled sauce. Among them, the highest passing rate of sauces was 90.0%; the lowest passing rate of meat and meat products was 44.9%. Exceeds the standard number of bacteria exceeded the standard, accounting for 39.0% of the number of unqualified. Conclusion The total bacterial and meat products in this area have high detection rate of coliform bacteria and coliform bacteria, which is still a common contamination in food. At present, the situation of food hygiene in this area can not be ignored. It is more seriously affected by microorganisms, and supervision and guidance should be strengthened.
