在1988—1991年中连续三年对九龙牦牛两个类系不同年龄的公牛,阉牛和母牛进行了屠宰试验,共对11个组38头牦牛的胴体特性和产肉性能进行了测试和研究。比较分析了各年龄组牦牛的体尺指数、胴体体尺、屠宰率、净肉率、眼肌面积及骨肉比等多个指标。结果表明2.5岁到6岁以上牦牛的屠宰率为47—56%,净肉率为37.84—45.57%。4.5岁阉牛屠宰率为56.04%,净肉率为45.57%,胴体产肉率为81.29%,眼肌面积为65.93cm~2,骨肉比为1∶4.28,和6岁以上牦牛的各个指标相近似。说明九龙牦牛是肉用性能良好地方牦牛品种。该研究是九龙耗牛种质特性测定和品种标准化研究的重要内容和组成部分。将为九龙耗牛选育和推进牦牛肉品资源的开发利用提供科学依据和参数。对提高其产肉性能探讨牦牛的适宜屠宰期及加速牛群周转具有重要的经济意义和现实意义。
In 1988-1991 for three consecutive years, two types of bulls, steers and cows at different ages in Jiulong Yaks were slaughtered. The carcass characteristics and meat producing performance of 38 yaks in 11 groups were tested and the study. The body mass index, carcass size, slaughter rate, net meat yield, eye muscle area and flesh to meat ratio of yaks in different age groups were comparatively analyzed. The results showed that the slaughter rate of yak from 2.5 to 6 years old was 47-56% and the net meat yield was 37.84-45.57%. The 4.5-year-old bullock slaughter rate was 56.04%, the net meat yield was 45.57%, the carcass meat production rate was 81.29%, the ocular muscle area was 65.93cm ~ 2, the ratio of flesh to meat was 1: 4.28, and the indexes of yaks over 6 years approximate. Kowloon yak is a good performance of local yak breeds. This study is an important part and component part of the study on the determination of germplasm and the standardization of varieties in the consumption of cattle in Kowloon. It will provide scientific basis and parameters for the breeding and utilization of cattle in Kowloon and the promotion and utilization of yak meat resources. It is of important economic and practical significance to discuss the proper slaughtering period and speed up the turnover of the herd in order to improve its meat producing performance.
