对池塘养殖的2龄和3龄咸海卡拉白鱼Chalcalburnus chalcoides aralensis的鱼体组成及营养成分进行了分析。结果表明:2龄和3龄鱼蛋白质的质量分数分别为19.59%、16.39%,脂肪的质量分数分别为1.81%、6.72%;3龄鱼的含肉率为65.02%,17种氨基酸总量为19.129%(鲜重,质量分数,下同),必需氨基酸含量为8.916%,其中赖氨酸Lys极为丰富(2.195%),4种鲜味氨基酸总量(8.549%)明显高于其它鱼类,而谷氨酸G lu含量最高(4.087%);用气相色谱仪测得3龄鱼含有17种脂肪酸,其中多不饱和脂肪酸(PUFA)含量最高(24.1108 mg/g),其次为单不饱和脂肪酸(MUFA)(22.3932 mg/g),饱和脂肪酸(SFA)含量最少(10.2916 mg/g)。
The body composition and nutrients of Chalcalburnus chalcoides aralensis cultured in ponds aged 2 and 3 were analyzed.
