目的了解南宁市近五年各类饮食单位公共餐具消毒质量的变化趋势,为提高餐饮具消毒的质量和监督管理效果提供依据。方法对2004-2008年南宁市各类餐饮单位及学校食堂的食具消毒监测结果进行统计分析。结果2004-2008年南宁市餐饮具消毒合格率分别为74.15%、70.16%、66.64%、61.51%和66.73%,其中小餐具的合格率略有提高,大餐具(菜碟、汤碗)的合格率下降(χ2=358.77,P<0.01)。结论南宁市部分餐饮具的卫生质量有了一定的提高,但餐饮具的消毒管理存在盲区,餐饮具的总体卫生质量不容乐观。应加强餐具消毒相关知识的宣传及餐具消毒重点环节的指导和监督管理。
Objective To understand the changing trend of disinfection quality of public tableware of all kinds of catering units in Nanning in the past five years and provide basis for improving the quality of tableware disinfection and the effect of supervision and management. Methods Statistical analysis was conducted on the results of disinfection and monitoring of utensils in various catering units and school canteens in Nanning during 2004-2008. Results The passing rates of tableware in Nanning from 2004 to 2008 were 74.15%, 70.16%, 66.64%, 61.51% and 66.73%, respectively. The pass rate of small tableware increased slightly, and the qualification of tableware (dish, soup bowl) Rate decreased (χ2 = 358.77, P <0.01). Conclusion The sanitary quality of some tableware in Nanning City has been improved to a certain extent. However, there is a blind spot in the disinfection management of tableware, and the overall hygienic quality of tableware can not be optimistic. Should strengthen the dissemination of tableware disinfection knowledge and tableware disinfection of the key aspects of the guidance and supervision and management.
