文昌鱼在动物进化的研究方面有重要地位。厦门刘五店文昌鱼,不但是厦门渔业上的老品种,还是厦门的特产。由于它的蛋白质含量高达70%,营养丰富,味道清津甜美,深受人们欢迎,在东南亚侨胞和港澳同胞中,是一种早已享有盛誉的珍贵海味品。文昌鱼虽然在西欧、北美和我国的青岛至海南岛沿海都有少量分布,闽南渔场也曾于1975——1978年调查期间探捕到,但唯有厦门刘五店鱼屿海区形成了作业渔场。一九二三年,厦门大学生物系教授 S·E·Light 在美国《科学》和上海《中国》杂志发表有关厦门刘五店文昌鱼的报告后,中外学者始知我国不但有大量的文昌鱼,而且已开发利用,形成群众性渔业。此后,世界各地许多生物学者即远涉重洋,纷纷前来厦门刘五店,探讨文昌鱼渔场环境,研究文昌鱼的生物学特性。一九三二年,Boring & Li 正式将厦门刘五店文昌鱼定名为 Branchiostoma belcheri Gray,继而,厦门大学金德祥等对刘五店文昌鱼进行了大量的形态和生态方面的研究工作,发表了许多研究报告。文昌鱼是一种底栖的脊索动物,幼体经过短暂的浮游期后,便潜居沙质海底,前端露出
