目的了解沈阳市食品卫生真实水平,掌握食源性致病菌污染状况,为食品安全风险评估提供科学有效数据。方法按照辽宁省食源性致病菌监测工作计划,参考食源性致病菌监测手册监测样品采样要求,全市4个区县共设监测网点80个,监测点主要设在农贸市场、超市(包括商店和便利店)、餐饮业等;监测食品包括肉制品、生食动物性水产品、焙烤食品、熟制米面制品、果蔬类、婴幼儿食品、冷面食品。监测项目包括副溶血性弧菌、单核细胞增生李斯特菌、沙门菌、志贺菌、金黄色葡萄球菌、大肠埃希菌O157:H7、诺如病毒、异尖线虫、蜡样芽孢杆菌、创伤弧菌、阪崎肠杆菌、大肠埃希菌等致病菌。结果全市80个监测网点,共监测7大类食品240件样品,检测食源性致病菌共970项次,总体检出率为2.7%,其中有5类、共26件食品检出食源性致病菌,占食品总数量的10.8%。结论食源性致病菌污染食品比较严重,要加强食品情况的致病菌污染的监测,防止食物中毒的暴发流行。
Objective To understand the real situation of food hygiene in Shenyang and to know the status of food-borne pathogens and to provide scientific and effective data for food safety risk assessment. Methods According to the monitoring plan of food-borne pathogenic bacteria in Liaoning Province and the sample sampling requirements of monitoring manual of food-borne pathogenic bacteria, 80 monitoring stations were set up in 4 districts and counties of the city. The monitoring points were mainly located in the farmer’s market, supermarkets Including shops and convenience stores), the catering industry, etc .; the monitored foods include meat products, raw animal-derived aquatic products, baked goods, cooked rice products, fruits and vegetables, infant foods and cold noodles. Surveillance programs include Vibrio parahaemolyticus, Listeria monocytogenes, Salmonella, Shigella, Staphylococcus aureus, Escherichia coli O157: H7, Norovirus, Anisakis, Bacillus cereus, Vibrio vulnificus, Enterobacter sakazakii, Escherichia coli and other pathogens. Results 80 monitoring stations in the city were monitored 240 samples of 7 major categories of food, detection of food-borne pathogens a total of 970 times, the overall detection rate of 2.7%, of which 5 categories, a total of 26 food detection of food Sexually transmitted bacteria, accounting for 10.8% of the total number of food. Conclusion Food-borne pathogenic bacteria contaminated food is more serious, we should strengthen the monitoring of food-borne pathogens to prevent outbreaks of food poisoning.
