一、概况我国酱油生产据史书记载有二千年历史,目前酱油年产量约二百万吨,占世界第一位。从业人员约六十万,年工业总产值约十二点五亿元。产量达万吨以上工厂不足十个,吉林酿造厂,广东珠江酱油厂年产量最大约二万吨。六千吨以上的有三十个工厂,三千吨的约五十个,全国县级以上厂有二千多个,近年区乡工业中出现了一批几百吨的酱油厂,均为就地生产,供应范围小。我国出口酱油亦占世界第一位,八四年为二万四千多吨,且百分之八十以上是广东酱油。从国际市场价格看,我们的酱油是有竞争潜力的,但酱油澄清度和包装是最大弱点。
I. Overview China’s soy sauce production has a history of 2,000 years according to historical records. At present, the annual output of soy sauce is about 2 million tons, which is the largest in the world. The number of employees is about 600,000, and the total industrial output value is about 1.25 billion yuan. There are less than ten factories with output of more than 10,000 tons, Jilin brewing factory, and Guangdong Zhujiang Soy Sauce Factory has an annual output of about 20,000 tons. There are 30 factories with more than 6,000 tons, 50 factories with 3,000 tons, and more than 2,000 factories at or above the county level in the country. In recent years, a number of soy sauce factories with a few hundred tons have appeared in the district and township industries. Production, supply a small range. China’s export of soy sauce also accounts for the first place in the world. In 1984, it was more than 24,000 tons, and more than 80% of it was Guangdong soy sauce. From the perspective of international market prices, our soy sauce has potential for competition, but soy sauce clarity and packaging are the biggest weaknesses.
