[目的]了解泰州市区乳及乳制品卫生质量,正确地引导消费,保护广大消费者的身体健康,为食品卫生监测与评价提供科学依据。[方法]2005年1月~2006年12月每月从泰州市区各乳及乳制品生产企业及城区各超市采集乳及乳制品样品,分别按GB5408.1-1999《巴氏杀菌乳》、GB5408.2-1999《灭菌乳》、GB2476-1999《酸牛乳》、GB10765-1997《婴幼儿配方乳粉Ⅰ》、GB10766-1997《婴幼儿配方乳粉ⅡⅢ》进行评价。[结果]泰州市区乳及乳制品总合格率为64.7%,其中杀菌乳、灭菌乳、酸牛乳、婴幼儿配方乳粉合格率90.0%、100.0%、33.3%、50.0%。调查的4类乳及乳制品样品中,菌落总数、大肠菌群、微生物、酸度、灰分合格率均为100.0%,脂肪、蛋白质、婴幼儿配方乳粉中金属、酸牛乳中乳酸菌合格率分别为88.2%、97.1%、77.8%、44.4%。[结论]泰州市区乳及乳制品的卫生质量有待进一步提高,今后应继续加强乳及乳及乳制品生产企业消毒、杀菌、产品包装等关键控制点的管理,加强卫生质量监测,确保销售环节的卫生、规范。
[Objective] To understand the hygienic quality of dairy and dairy products in Taizhou city, guide the consumption correctly, protect the health of consumers and provide a scientific basis for food hygiene monitoring and evaluation. [Method] From January 2005 to December 2006, milk and dairy products samples were collected from dairy and dairy products manufacturing enterprises and supermarkets in urban area of Taizhou City from January 2005 to December 2006 according to GB5408.1-1999 “pasteurized milk” GB5408.2-1999 “sterilized milk”, GB2476-1999 “yogurt”, GB10765-1997 “infant formula milk powder I”, GB10766-1997 “infant formula milk powder Ⅱ Ⅲ” for evaluation. [Results] The total passing rate of milk and dairy products in Taizhou was 64.7%. The pass rates of sterilized milk, sterilized milk, yogurt and infant formula milk powder were 90.0%, 100.0%, 33.3% and 50.0% respectively. The percentages of colony, coliforms, microorganisms, acidity and ash in the four types of dairy and dairy products surveyed were 100.0%. The pass rates of lactic acid bacteria in the fat and protein and infant formula milk were 88.2%, 97.1%, 77.8%, 44.4%. [Conclusion] The hygienic quality of milk and dairy products in Taizhou city needs to be further improved. In the future, we should continue to strengthen the management of key control points such as disinfection, sterilization and product packaging of milk, dairy and dairy products manufacturers, strengthen the monitoring of hygiene quality and ensure the sales links Health, regulation.
