目的调查江门市市售面制食品中铝污染状况,为开展监督监测工作提供依据。方法对全市部分餐馆、面食制售摊位、超市和农贸市场上的面制食品进行随机采样,按照GB5009.182-2003规定的方法测定。结果检测8类面制食品109份,总合格率为66.1%;干面、湿面和饼干合格率最高均为100.0%;面粉合格率为93.3%;再就是面包、蛋糕、油条油饼、馒头包子合格率分别为87.5%、60.0%、46.7%和25.0%。结论江门市市售部分面制食品中铝含量超标严重,应采取措施,确保这类食品的食用安全。
Objective To investigate the status of aluminum pollution in commercial noodles in Jiangmen City and provide the basis for supervision and monitoring. Methods Random sampling was conducted on some of the restaurants, pasta production and sales stalls, supermarkets and farmer’s market, according to the method specified in GB5009.182-2003. Results Eighty-nine kinds of noodles were tested with a total pass rate of 66.1%. The highest passing rate of dry noodles, wet noodles and biscuits were 100.0%, the passing rate of flour was 93.3%, and then the bread, cakes, fried crackers and steamed buns The pass rates were 87.5%, 60.0%, 46.7% and 25.0% respectively. Conclusions The content of aluminum in the commercial portion of Jiangmen City market exceeds the standard seriously, and measures should be taken to ensure the food safety of such foods.
