材料:猪蹄膀1个(约500克)香葱3棵生姜1小块大蒜3瓣大料适量淀粉适量调料:食用油500克(实耗50克)香油1小匙酱油1大匙料酒2大匙香醋1/3大匙辣豆瓣酱3小匙精盐1小匙白糖1小匙味精1/2小匙做法:1.蹄膀洗净后连皮切成大块,用酱油拌匀泡10分钟;葱、姜洗净分别切成段、片。2.锅内放油,烧热,将蹄膀炸成淡黄色,捞出浸入冷水中。3.锅洗净置火上,加入浸泡蹄膀时剩下的酱油和蹄膀、葱、姜、大料、酒、水,用小火煮至烂熟且汁变稠为止。
